Pair of Old Wines
I managed to make a second booking for lunch at The Chairman when they opened up for reservation so this time we went with a slightly bigger group on a Sunday afternoon. I felt I pretty much went through most of the dishes in their re-designed menu in my previous visits so this time it's pretty much a highlight of everything that I liked.

Boxing Day Lunch
Sometimes going to the same restaurant within a short span meant one gotta end up with some repeated dishes, but “no problem” at The Chairman this time when I went back for lunch 2 weeks after another dinner there. With the new menu system we were able to pick from a list of dishes so I was able to choose something different (mostly) and still got some of their signatures.

Two Point Zero
"Wanna join us at dinner at The Chairman?" when my friend F offered me one of the prized seats for a meal at the most sought-after restaurant in town, I didn't hesitate to say yes even though that meant having two serious meals back-to-back on the same day.

The lunch before take-off
We managed to squeeze one more fine meal before CYY flew out. We made a few bookings at The Chairman at the beginning of the year and this is our last one with a table for 4 people in a Saturday afternoon, less than 12 hours before the flight took off.

Three in Three
It certainly felt like déjà vu when a few of us had lunch “together” at The Chairman across multiple tables – we did this last year because of COVID lockdown, and this time again. And credits to the restaurant for being accommodative and flexible despite the circumstances. And surprisingly, it’s our third visit to the restaurant in as many months - we were just extremely lucky getting a table to eat.

3pm Dinner
Upon learning the new dine-in ban announced by the government in early January, the first phone call I made was to The Chairman to make sure my dinner booking can be switched to late afternoon to stay within the rule. With a booking at this ever popular restaurant became one of the most sought after commodity in town (despite the COVID downturn), we intend to do anything we could to keep the original plan, even though it meant having dinner at 3pm, and being seated in separate tables for our group of 8.

No Flower Crabs
We went back to The Chairman to eat late last month. Given they have been solidly booked out for the rest of the year, barring a "miracle", this could as well be our last meal there in 2021.

Monday Night at The Chairman
I felt like this is becoming our routine monthly dinner gathering of sorts when we returned to The Chairman for dinner on a Monday night. With the skyrocketing popularity at the heel of the restaurant’s Michelin and Asia’s 50 Best Restaurant success (plus the strict rules related to COVID) such routine is getting more and more difficult and few and far between.

Now Asia's Best
We love our last meal at The Chairman in January so much that we made another booking to eat at the restaurant before we finished the meal, and before we know for sure dinner service would be resumed by then. And I am glad that we did have the foresight of planning in advance.

The Freshly Minted
Call it a stroke of luck when we managed to get a table at The Chairman on the weekend right after they have regained the Michelin star after almost 10 years. A table to eat there was already hard to get by these days given they couldn’t open at night, and the newly minted accolade won’t help on that front either.

Another Dinner at The Chairman
DY seems to be surprised when he spotted us sitting at the table at his restaurant The Chairman one evening. Well we were just as surprised too as we didn’t expect him to be at the restaurant that late into dinner service. No matter what, it’s good that we managed to get a last-minute booking to eat there, and that we ran into each other and could catch up briefly.

Chairman - The Encore
As soon as we walked out the door from The Chairman after a satisfying lunch a few months ago, the same group was already planning an encore and we soon fixed a date after the festive season in this new year to do that, this time on a Saturday afternoon with even more people. I once again asked DY to help work out the menu for us and we ended up with some repeats and some new dishes, plus one vegetarian menu with totally different dishes for one of our friends.

Solid Choice for Canto Food
We never need a reason to eat out well, but of course, it helped when our friends J and D asked us to join their family for dinner at The Chairman a couple of weeks ago. Dinner at The Chairman
Following a spectacular meal at the Ap Lei Chau fish market, almost the same group of people re-convened in the same evening at The Chairman for another eating session. It’s been a while since my last visit to this classic Cantonese restaurant which is already in its 10th year at the same location and has gotten quite a reputation for its intricate, true-to-the-tradition cooking. And with its owner DY – who is considered by many one of the more serious foodies in town himself - personally picking the dishes for us, I was really curious how the dinner would fare given my already-high expectation.

Reunion Dinner at The Chairman
It was a long overdue reunion for the H gang so we managed a quick dinner meet-up at The Chairman one Tuesday evening. The place just slipped out of our mind for a while for whatever reasons so I am curious how their food fare since our last visit.
